This is breakfast for the days when you have a little time to sit down. Warm greens and eggs sit alongside crunchy vegetables, with a simple sesame dressing to tie everything together.

Into the kitchen.

The method

  1. Bring a small pan of water to a gentle boil. Lower in the eggs and simmer for 7 minutes for jammy yolks, or 10–12 minutes for firm yolks. Cool under cold running water, peel, and halve.

  2. Heat the olive oil in a frying pan. Add the spinach and cook for 2–3 minutes until wilted. Season lightly.

  3. Whisk together the lemon juice and sesame oil. Toss the cucumber, radish, and carrot with half the dressing.

  4. Arrange the greens, vegetables, avocado, tomatoes, and eggs in two bowls. Drizzle with the remaining dressing and scatter over the sesame seeds.

A little kitchen wisdom

Prepare the sliced vegetables ahead to make this quicker in the morning. For fully cooked eggs, choose the longer cooking time and check that the yolks are firm.
